Cathy's Kitchen loves "Famous Summer Muffins
1 C. Summer Squash
½ C. Flour
½ C. Honey or sorghum
½ C. Corn Starch
½ C. Sugar
1/4 C. Brown Flour
1/4 C. Oil 
1/3 C. Milk
3 Eggs
1 tsp. Baking soda
1 tsp. Baking power
1 tsp. Vanilla
1/4 tsp. Nutmeg
1/4 tsp Cloves
½ tsp. Cinnamon
Pinch of dried Ginger and salt to taste
Nuts (optional)
In bowl add all dry items. Stirring,
blend in wet ingredients. When well mixed
spoon into greased muffin pan(s) that
accommodate dozen greased muffins. Bake in
370 degree oven 15 to 18 minutes or until
done. Turn out onto platter and
let cool.

Potato Egg Stir-Fry
Ingredients
2 or 3 Potatoes (small)
3 Eggs
3 T. milk (dried if its all you have on hand.
1 T. Cheese (grated)
1/4 C. Chives, Spinach, or greenery of choice, fresh or
dried (optional)
1/8th tsp. Pepper
Salt to taste
Directions
Beat eggs and milk in bowl.
Dice potatoes, sauté in pan with a little oil or
margarine to avoid sticking. Add milk and eggs, stir
until eggs are cooked to scrambled state. Add cheese,
seasonings and optional herbs.
Serve over bed of rice.
This is cheap and easy food at it’s best. Comfort food,
good all year round.

Is It Spice Or Herb?
Definitions of Spices and
Herbs have changed over centuries.
American Spice Trade Association states that today
spices are known as ‘Any dried plant product used
primarily for seasoning." Their all-inclusive definition
cover a range of plants including what we know as herbs,
seeds or even dehydrated vegetable blends.
When used to enhance taste or fragrance "Spice" and
"Herb" terms are both used to describe plant parts.
Herbs however primarily preserve food, heal wounds,
cure illnesses, even augment cosmetics.
Both Spices and Herbs can come from seeds, leaves,
flowers, plant stems or tree bark. Spices for fragrance
usually come from more aromatic plants such as pepper,
cloves, ginger, cinnamon. Most grow in tropical or
subtropical regions while herbs are often recognized as
greener, leafy food sources like thyme, mint, rosemary
from temperate areas.
