Macaroni Grill Foccacia

* 9 T. olive oil
* 3 C. all-purpose flour
* 3/4 C. semolina flour
* 1/2 tsp. salt
* 1 1/2 T. fast-rising active dry yeast
* 1 1/2 C. hot milk
* 1 T. fresh rosemary
Pour a scant tablespoon of the olive oil into 9" cake pan; spread evenly.

Place flours, 2 T. olive oil, 1/4 tsp. salt, and yeast, in a bowl, mix or blend. Mix slowly whild grandually adding hot milk. Knead with hands a few minutes. Sprinkle a little flour on bottom of cake pan. Spread kneeded dough evenly in pan.
Cover with a towel and let rest for 30 minutes.

Brush dough with olive oil. Sprinkle top with rosemary, bake 20 minutes in 400 degree oven.

Remove and drizzle with remaining oil.

8 oz. saussage
3 tsp. vegetable oil
2 lbs. chicken
6 garlic cloves
3 large stalks celery
2 small green peppers
2 medium onions
3 C. rice
1 tsp. paprika
1/4 tsp. dried oregano
1/2 tsp. dried thyme
1 tsp. salt
1 can chicken broth
1 can diced tomatoes
1 1/4 C. water
1/2 tsp hot pepper

In deep oven-safe skillet cook sausage, add oil, chicken, brown. Remove sausage and chicken, set aside.

Add remaining ingredients to pan, cook 12 minutes, return sausage and chicken. Bake in oven until rice is tender, about 10 minutes. Makes 8 to 16 servings.

Season To Taste...

Herbs Make Excellent Seasoning as well as medicines.
Buyng Herbs: Choose those that are crisp or erect without a droopy look. Leaves should be vibrant colored, lacking brown spots. Pick those with fresh smelling strong scent.

Store Well: Herbs last longer wehn refrigerated. Wrap flat leaves or small stems gently in a damp paper towel, then seal in a plastic bag. For large quantities or for bigger herbs like basil in a bunch, stand it upright in a glass of shallow water before refrigerating.

Dry Herbs: Use fresh when possible. If not, substitute dried in amounts of 1 teaspoon dried equals 1 tablespoon of fresh chopped.

Cooking With Fresh: Add herbs at the end so the heat cycle to avoid destroying flavor.
