Apple Cake Fame
You too can enjoy famous this world class apple delight serving 16. Enjoy the holiday season without demanding travel to Gatinburg’s famed Tennessee Calico Inn.
To whip up amazing in your kitchen, you need:
4 to 6 cooking apple (depending on size)
4 T. sugar
3 tsp. cinnamon
4 C. Flour (no need to sift)
3 C. additional sugar
5 eggs
1 C. veggie oil
3 tsp. Vanilla
½ C. Orange juice
2 tsp. baking soda
1 tsp. baking powder
2 C. confectioner sugar
2 T. Margarine (soft)
2 tsp. Vanilla
3. T. Water
Pinch of salt (to taste)Grease and flour one 10" or 12" bundt pan.

Peel and core apples, cut into thin slices. Toss in mixing bowl with 4 tablespoons sugar, slightly more of less depending on apples size and personal taste. Add cinnamon. Let set to allow sugar and cinnamon to blend into apples.

Mix flour, sugar, eggs, salt, oil, orange juice, baking powder, baking powder, and vanilla in large bowl, by hand or in blender.

Fill bottom of prepared pan with a layer of this thick dough, alternating batter with apples, three times finishing with a 4th batter layer.

Bake in 350 degree oven 1 and ½ to nearly 2 hours. Test with toothpick until batter no longer clings. Remove from heat and allow cake to slightly cool.

Mix remaining ingredients, confectioner's sugar, butter, vanilla and water, until creamy, then drizzle over still hot cake.

Warm Up Fall With Oven Pancakes -

How about a creative way to use the handy dandy egg?
6 or 8 Eggs
3 oz. Packaged Ramen Noodles (2 packages)
1 T. Sesame oil
1 T. Vegetable oil
1 Celery stalk
2 T. Chopped yellow or green onions
Small can of mushrooms
Grated fresh Ginger or Dried is fine
Soy sauce to taste

In oven proof pan bring 4 cups water to boil on top of stove, add noodles broken into short pieces. Set aside seasoning for some future use.

Cook 2 to 4 minutes, drain, dry pan. In mixing bowl blend eggs, soy sauce, mushrooms (sliced), ginger, seasoning including a pinch of sugar if desired.

Add vegetable oil to oven pan, brown finely chopped celery and onion, then add Noodles and mix. Smooth out to pancake layer. Place in oven, bake at medium heat 9 or 10 minutes.

Turn out onto dish, slice into serving wedges of 21 gms total fat, 367 calories, 14 gms protein.

Roasted Tomato Rosemary Pasta
1 lb. Italian inexpensive tomatoes
Garlic, (1 clove or tsp. dried granules)
Salt, Pepper, pinch of Sugar if desired.
1 lb. 1 package Pasta
6 T. Olive oil
1 or 2 oz. Fresh rosemary or dried Rosemary
(Optional 1 fresh Bell Pepper)

Place tomatoes sliced in half, rub in garlic, salt and pepper (optional sugar). Place flat side down on lightly oiled cookie sheet, bake 12-15 in 375 degree oven until roasted.

Cook pasta in salted water until tender. Put rosemary and remaining oil in blender, puree. Season to taste, toss with pasta and serve.

Season To Taste...

Some of the spice-up additions are homemade by adding hearty tastes like raisins, herbs, berries, nuts, to a healthy base such as oil, yogurt, vinegar, or creams. Most often these are served as a topping, or dressing, added to give normally quite foods a big spark flavor.

These can be created then kept handy for weeks so long as they are refrigerated. This combo adds life to your Italian, Native American, Asian, and Italian dishes

1 ½ teaspoon dried or fresh thyme
3 oz. dried or 6-7 leaves fresh basil
1 T. dried or 1 oz. fresh oregano
1 T. dried or 2 oz. fresh rosemary
1 3/4 C. olive oil
Add herbs to oil. This can be placed in blender for a quick turn, or store in 14 oz. Bottle as is using funnel If you don’t have a funnel make a cone of handy aluminum or cutting the top of a smaller plastic bottle works fine. Pour mixture into bottle. Close and refrigerate at least 1 to 2 days until ready for use.
