Chocolate Strawberry Smoothie
Ingredients:
1 cup vanilla yogurt
1/2 cup milk or soy milk
1 cup fresh Strawberries
2 tbls chocolate syrup
6 to 8 ice cubes

Directions:
Pour all ingredients into a blender. Cover and blend until smooth.

Garden Season
By Starting a windowsill garden you can enjoy your herb garden all winter long. There are several types of herbs that can grow easily in small pots that require very little care. You'll be gathering  fresh herbs from your windowsill all winter long.

First ensure you have a windowsill that allows a minimum of 5 hours of sunlight per day, usually facing south or south east is ideal.

Acquire a container with a depth of at least 6-12 inches.

Use a wide container for planting multiple herbs or a 6" pot for single herbs.

Prevent soil born diseases by using a soilless potting mixture, ensuring the mix is light  and able to drain very well.

Place 2-3 inches of mix in the bottom of the container.

Place herb plants on top of the 2-3 inches of mix.

Finish filling the container with mix pressing the mix around the plants gently. For watering purposes leave about an inch of space at the top container. Remembering to always water sparingly. Herbs will not thrive in wet soil.

Fertilize once a month with a fertilizer labeled specifically for use on edibles.

Give your herbs a few weeks to acclimate. Then it is time to start gathering your herbs once you begin to see new growth.

Here are some very useful tips:

Don't choose herbs that grow too large. Chives, mint, basil, parsley, lavender and thyme are great choices.

Fluorescent lights can be used in place of  a sunny window. They will need to be placed close to the plants (18") and kept on for about 10 hours/day.

Snip and use your plants often to encourage full and bushy growth.

Never trim more than 1/3 of the herbs foliage.

Bulging Budgets
Pork Shoulder & Egg Noodles
2 slices bacon
2 tsp. crushed Caraway seeds
1 head green cabbage (cut into 8 wedges)
1 package (1 lb.) Wide egg noodles
1 cup water
salt and pepper to taste

Pat meat dry, season, and set aside.
Cook bacon in skillet, set aside.
Brown pork in a large, oven-proof pan on top of stove.

Remove. Arrange cabbage around meat. Add noodles then water. Cover with bacon and drippings. Place in 400 degree oven, cover, bake approx 110 minutes or until a inserted fork leaves clean holes in the meat and the cabbage is tender. Remove from heat, leave to cool uncovered for ten minutes.

Transfer to platter, Serves 8
Only 490 calories

To Your Good Health

HBP or High Blood Pressure is becoming a national epidemic. So with it or without the issue, how about enjoying a lovely Mango Chicken Summer Salad Dinner that will raise only rave reviews, not blood pressure.

1 tsp. Olive oil
1 T. Light soy sauce
1 tsp. Fresh ginger (grated)
1 Clove garlic (crushed)
2 Chicken breasts (remove skin)
2 lbs. Potatoes (well scrubbed)
Dash of dried Mint or fresh if you have it.
1 Mango peeled and sliced
4 C. Sliced lettuce
Couple frozen broccoli florets.

Dressing–
1 T. Orange juice
½ tsp. Orange zest (finally grated rind)
1 tsp. Dijon mustard
Pepper and minimum salt, to taste
Optional– 2 T. finely chopped nuts (peanuts are fine)
Place ginger, garlic, soy sauce in bowl and blend. Coat Chicken breasts, set aside.

In sauce pan add potatoes, water to cover, cook until tender, add mint and broccoli, then set aside.
Place chicken in pan or on grill, cook until done, then slice.
Make dressing by adding orange juice, orange zest, mustard, nuts and oil. Stir until mixed then gently toss with lettuce.

One of the best year round seasonings are Caraway Seeds and they can be yours virtually free, with just a bit of time involved. Caraway likes to grow outdoors, to heights of two feet. It can additionally be planted to grow indoors in a pot. That version will be considerably smaller.
