What exquisite cuisine is complete without dessert? This recipe is so good your tongue will beat your brains out trying to get to it.
 
Orange Coconut Bliss   

1 box vanilla cake mix
4 Tbs. orange flavoring
2 cups coconut flakes
1 Tbs. orange zest
4oz can of sweetened coconut milk

  Prepare cake batter as directed according to the box, add orange flavoring, coconut flakes, and orange zest. Bake according to box instructions.
  Once cake has finished baking, drizzle coconut milk over the entire cake. Let cake stand for about 10-15 minutes. Enjoy!
Serves 10-15
Alternative: Use real coconut. Head gear may be required!

Garden Season

Garden season is in full swing.

Now is the best time to begin planting herbs. Check on the package to see what herbs grow best in you area. This is a huge moneysaver.

Plant your herbs in flower pots as they are easily damaged by frost. On cold nights you can bring the pots inside. 

To prepare your herb pots, mix some used coffee grounds and cotton balls in with the soil. The coffee grounds decompose slowly, feeding the herbs. The cotton holds moisture to prevent drying out.

Bulging Budgets

Coffee is King when it comes to inexpensive flavoring, so why not kitchen-cooked or spring-grilled Burgers infused with Cafe/Decaf? Coffee adds substance, body and flavor to desserts, soups, fish, and meat, as well as sauces and gravies so treat your family again and again.

These make an easy, cheap and quick meal for one person or a crowd and can be followed by a delicious coffee dessert too.

Cafe Burgers
Brew coffee using extra-fine coffee grounds. If yours aren't fine, use your grinder or place grounds between two sheets of wax paper and roll a rolling pin over them.

1 lb. inexpensive ground beef
1/4 cup grated cheese
1 Tbs. extra-fine powdered coffee grounds
1 Tbs. Worcestershire sauce
1 Tbs. chili powder, or to taste
1 tsp. Dijon-style mustard
1/4 cup green onions, chopped fine
1 small Jalapeno pepper, seeds removed, sliced thinly
1/4 cup red pepper, chopped fine

Mix all the ingredients in a large bowl.
Form into 4 to 6 five-inch patties then cook in your method of preparation. Cooking under your oven broiler or on an outdoor grill works great.
Serve in buns or with creamy-inside baked potatoes.
Diced onions, tomatoes, and dried herbs make nice toppings if you have them.

The following is from a farmer who grows and packages carrots for IGA, METRO, and LOBLAWS.

What appear to be (baby) or cocktail carrots sold in small plastic bags are actually created from larger, older crooked or deformed carrots that have been put through a machine which cuts and shapes them to look like baby carrots. They are then dipped in a preserving solution of water and chlorine--yes, the same chlorine used to maintain your swimming pool--and sold to unsuspecting shoppers.

Since the vegetables no longer have natural skin protective coverings, they are subjected to a higher dose of chlorine. You will notice that after a few days in your fridge these beautiful, orange carrots will tend to develop a white covering.

This is the chlorine resurfacing. At what cost do we put our health at risk to have esthetically pleasing vegetables, since chlorine is a well known carcinogen?

This eloquent rice dish with egg, bacon and cheese (or a combination of the three, depending on the health and weight of your best friend) will satisfy even the pickiest pets. This breakfast isn’t a heart-stopping killer so feel free to use as is or alter to meet your requirements. Doggie Friend Breakfast (Single serving)


1 slice of turkey bacon
1 tsp. vegetable oil
½ cup cooked brown rice
1 egg, beaten
¼ cup shredded cheese

Steam rice.
Cook bacon in a small skillet over medium heat until done.
Add oil, then rice. Heat thoroughly, stirring occasionally.
Push rice to the side of the pan. Add egg, stir until done then mix into rice and meat mixture.
Sprinkle on cheese, let cool then transfer to serving bowl.

NOTE: If desired, top with bit of greenery. Maybe a little bit of healthy chopped lacy celery tops that you don't use in the potato salad?
