Chef Nathan Smart Savers

 Chef Nathan's find of the week was huge ripe canned Black Olives at Dollar General. With that he came up with a healthy tasty inexpensive meal for you.

Tomato Olive Couscous
Mediterranean dishes have long inspired creativity.

Ingredients:

1/4 C. Black Olives (chopped or sliced)
1/2 C. Onions (chopped)
1 can diced tomatoes (reserve liquid)
1/3rd tsp. diced garlic or garlic powder
1 C. Liquid (bullion or water)
3/4th C. Couscous
Seasoning to taste
Combine un-drained tomatoes onions pepper, garlic, water, and salt in a sauce pan and bring to boil.
Stir in couscous , cover, remove from stove and let stand a few minutes.
Stir in olives, cover a few minutes more.
Serves 4

Addition if desired: Serve with bruschetta (flat bread much like baked pizza dough) topped with a slice of tomato and/or mozzarella cheese drizzled with olive oil, then baked.

Leftovers Add Up To Big Savings. Roast
Beef Sandwich (hot)
1-2 cups leftover roast beef 1 1/2 - 2 cups leftover gravy
4 slices bread

Warm the beef and gravy. Pour over beef on the bread. Serve warm. This is also good served on toasted bread. Serves 4.

Beef & French Dip
Slow cook inexpensive raw beef then slice thin (Juice from roast makes tasty beefy bouillon cubes)
4 French rolls sliced open-face
Cover rolls with thin layer of sliced beef. Pour left over warm roast juice into 4 bowls.

Serve liquid for sandwich dip..
